J&L Paris looks back at the legend of the birth of bistro(t)s. The term is said to have originated in Montmartre, at the home of Mother Catherine, in 1814. It would be the transformation of the Russian word "bystro, bystro" which means "quick, quick!"
Today, the bistro is simply a popular place to consume charcuterie and a glass of wine, although bistronomy has also made an appearance!
